Simon Courtenay-Warren started his catering career in 1979 as a management trainee with Grand Metropolitan Hotels at The Falcon Hotel in Stratford-upon-Avon. After a change of direction in the early eighties (as a photo-journalist working for a defence publication in Europe) he re-joined the hotel industry in 1984 as an Assistant Food & Beverage Manager with Celebrated Country Hotels at Billesley Manor Hotel near Stratford-upon-Avon.
